It’s like YoGo custard, but better! No wonder it’s my GoTo.

This chocolate chia pudding is one of my favourite breakfasts, but also great as a snack when you’re needing a sustaining chocolatey hit.

In my post “THE RELATIONSHIP BETWEEN PCOS AND INSULIN” I discuss the importance of eating balanced meals which include healthy fats (milk, chia, yoghurt), proteins (nuts/seeds) and fibre (chia seeds) to support hormone production. This chia pudding is just that, it will satisfy your sweet tooth but also keep your stomach full too.

It is also a very forgiving recipe, and easy to adapt to suit your specific taste.

Recipe makes 4 x serves

Ingredients
1/3 cup cacao or cocoa powder Dutch processed
200 g boiling water
2 tablespoons of honey or maple syrup (or to taste)
300-400g milk of choice
1/2 cup chia seeds black or white

Optional extras:

  • protein powder or collagen powder
  • Vanilla extract
  • Salt
  • Adjust your liquid (milk) to suit. 300g milk =  mousse like consistency, whereas 400g + = soft pudding texture).

Method

  1. In mixing bowl, combine the cocoa powder with the boiling water, whisking to dissolve the cocoa and break up any lumps.
  2. Add the milk and honey/maple syrup and whisk until well combined. *If adding protein powder or collagen, adjust milk levels to suit*
  3. Once combined, whisk in the chia seeds and wait for the mixture to cool slightly before the next step (blending).
  4. Pour the mixture into a food processor and blend until smooth and pudding-like in texture.
  5. Once smooth, pour the pudding into jars, a large bowl or a container—this recipe yields 3-4 large servings.
  6. Let the pudding cool before sealing the jars and placing them in the fridge. While the pudding will have a loose consistency immediately, it will thicken more after a few hours in the fridge.
  7. Eat within a few days.

Topping Suggestions

  • Mixed berries and yoghurt
  • Desiccated coconut and chopped almonds
  • Choc chips/cacao nibs and buckwheat kernels
  • Yogurt and granola
